We’ve listened to the numerous requests we’ve had to bottle our chilli oil and our very own ‘Eat the Bits’ is now available to buy at both Tsuru and its sister restaurant Tonkotsu and at Selfridges Foodhall.
In line with our philosophy, the base oil is made from premium and UK-sourced rapeseed oil and the heat comes from a blend of d’Arbol chilli flakes and shichimi togarashi (a Japanese spice mix) and the depth of flavour is produced with the addition of red miso, garlic, onion, sesame seeds and sesame oil. The result is an incredibly addictive combination of hot nuttiness, packed full of natural umami and completely MSG-free. Tsuru’s chef/owner Kensuke Yamada has adapted our kitchen recipe for use at home.
‘Eat the bits’ can be used as a cooking ingredient; add to stews, stir fries, use as part of a marinade, add a splash of vinegar for a spicy salad dressing, combine with sour cream for a chilli dip or simply spoon it over meat or fish before baking or grilling. It can equally be used as a condiment, spoon ‘Eat the bits’ over rice, noodles, pizza, pasta or even add it to a pile of mashed potato.
